Tostones: green plantain rounds fried, smashed and fried again — crispy outside, tender inside. The Caribbean and Latin classic.

Green plantain tostones

Tostones (or patacones) are the savory star of green plantain: fry the rounds, smash them, then fry again for a disc that's crispy outside and tender inside. Perfect as a snack or alongside grilled fish.

Ingredients

  • 2 green plantains (or ANSEMO frozen tostones, ready to fry)
  • Frying oil
  • Salt
  • Optional: crushed garlic, lime juice

Steps

  1. Heat the oil to 175 °C.
  2. First fry: brown the rounds for 3 minutes. They should be tender but not colored.
  3. Smash each round with the bottom of a glass into a flat disc.
  4. Second fry: return the discs for 2 to 3 minutes until golden and crispy.
  5. Drain, salt (rub with garlic if you like), serve hot.

Chef's tip

With ANSEMO frozen tostones, you skip the peeling and the first fry: straight to the fryer for a single cook. Serve with a chili sauce or guacamole.
