Crispy rice with alloko brings together everything we love: golden, slightly crispy fried rice, soft caramelized rounds of alloko (fried ripe plantain), and a touch of vegetables. A sweet-savory sharing dish that always makes an impression.
Ingredients
- 1 bag of ANSEMO IQF Plantain Slices
- 300 g cooked rice (ideally day-old, well chilled)
- 2 eggs
- 1 onion, 1 garlic clove
- 1 bell pepper, a handful of peas
- 2 tbsp soy sauce
- Oil, salt, pepper, spring onions
Steps
- Fry the alloko: drop the still-frozen rounds into oil at 175 °C for 4 to 5 minutes until caramelized. Drain and set aside.
- Sauté the aromatics: in a very hot wok, fry onion, garlic and pepper with a drizzle of oil.
- Add the cold rice and let it catch slightly to crisp up, without stirring too much.
- Scramble the eggs on the side of the wok, then mix into the rice with the peas and soy sauce.
- Plate up: spread the crispy rice, top with the alloko rounds, sprinkle with spring onions.
Chef's tip
