Homemade plantain chips

Crispy, lightly salted, addictive: plantain chips are the gourmet alternative to potato crisps. Use green plantain, sliced very thin.
Ingredients
- 2 green plantains (or ANSEMO plantain strips, ready to fry)
- Frying oil
- Fine salt
- Optional: smoked paprika, chili, garlic powder
Steps
- Slice the green plantain into very thin strips (a mandoline is ideal).
- Heat the oil to 180 °C.
- Fry in small batches for 2 to 3 minutes, until golden and crisp.
- Drain on paper towel.
- Season right away: salt, and a touch of paprika or chili if you like it spicy.
Chef's tip
For effortless, even chips, start from ANSEMO plantain strips, already sliced and pre-fried: just finish the cooking. Keep them in an airtight box to stay crunchy.
