In the deep fryer (the classic)

The go-to method for alloko and chips.

  1. Heat the oil to 175 °C.
  2. Drop the slices in still frozen (no need to thaw).
  3. Fry 4 to 5 minutes until golden.
  4. Drain, salt, serve right away.

In a pan

Great without a fryer: a thin layer of oil, medium heat, flip the slices halfway for a golden crust on both sides (6 to 8 min).

In the oven

Lighter: 200 °C, 20 to 25 minutes on an oiled tray, turning halfway. Perfect as a side for meat or fish.

In the air fryer

The trend of the moment, little oil:

  1. Preheat the air fryer to 190 °C.
  2. Spread the slices in a single layer, a drizzle of oil.
  3. 12 to 15 minutes, shaking the basket halfway.

Green or ripe: it changes the recipe

  • Green plantain → tostones, chips, savory sides
  • Ripe plantain → alloko, caramelized plantain, sweet-savory
